I have been bad at keeping up with this blog. :( I am going to try to be better at because I do have a lot to post. :)
May 15th-21st
Sunday: Grilled Peppercorn Marinated Pork Roast(pre-packaged from the store)- This makes yummy enchiladas if there is leftovers! We had potato salad and grilled zucchini and onions with it.
Monday: Cheddar Broccoli Soup with French Bread-so not healthy but yummy!(Cambells soup- 2 cream of broccoli and 1 cheddar cheese, frozen broccoli, cheddar and mozzarella cheese, salt, pepper, garlic and onion powder)
Tuesday: Chicken and Artichoke Casserole (shredded chicken, pasta, artichoke hearts, sun dried tomatoes, zucchini, spinach, mushrooms, parmesean cheese, salt, pepper, garlic and onion powder)
Wednesday: Bean and Cheese Quesadillas (vegetarian dish for the week)
Thursday: Ginger Beef with Onions and Garlic (Thinly sliced beef, chicken broth, onion, garlic, salt and pepper, fresh grated ginger. Simmer in a pot or throw in crock pot)
Friday: Creamy Turkey Dinner (turkey breast, beef broth, balsamic vinegar, onion, mushrooms, half and half, frozen green beans, parsley, salt, pepper, garlic)
Saturday: Enchiladas (ground beef, corn tortillas, beans, cheese, green salsa and half and half)
